Chardonnay / Chenin Blanc / Sauvignon Blanc from biodynamically cultivated vines in the Cteaux du Layon. Grapes are directly pressed to create a white juice. Whole-clusters of Chardonnay/Chenin Blanc/Sauvignon Blanc are thrown in to macerate/infuse (flotation method) for 1-2 weeks before pressing (ergo the cuve’s name ‘dip’ as in to take a dip). Spontaneous fermentation and aging in tank prior to bottling unfined, unfiltered, no additional SO2.
