The agave we use is only hand selected, 100% Blue Weber agave of the highest quality. It is grown, in our case, a minimum of 7 to 10 years to obtain full maturity of its sugars. The agave is harvested in what is called the jimado process, where the leaves are removed to expose the hear or pia of the agave, weighing about 50kg.
