Bright, citrusy Mezcal from Puebla in central Mexico. The producers distil three different agaves to make Ensamble Papalote, Espadn and Tobal all of which are roasted in underground ovens, fermented in the open air, and distilled using traditional copper pot stills. Expect layers of cooked agave, smoke and spice.
